Love


Love is everything. It is the making of dreams and of promises to keep.Love is having stars in your eyes.Tomorrows in your heart. It is the giving of songs and of silences and the holding of memories only the heart can see. Love can be the sudden magic of a moment. Though frequently its as subtle as a glance from across a room. It can be felt in the soft squeezing of hands, a gentle hug or the sharing of whispers from within the hearts. Without love in our hearts, our lives would be as empty as a tomorrow without a dream.

Jesus: The Son Of Man


JESUS; THE SON OF MAN

He lived among us. He donned he costliest of robes; a human body. He made a throne out of a manger and a royal court out of some cows. He took a common name--Jesus--and made it holy. He took common people and made them the same. He could have lived over us or away from us. But he didn't. He lived among us.

He became a friend of the sinner and brother of the poor. He touched their sores and felt their tears and paid for their mistakes. He entered a tomb and came out and pledged that we'd do the same. And to us all, and to all the frightened Freds of the world, he shared the same message. "Don't let your hearts be troubled. Trust in God, and trust in me...I will come back and take you to be with me so that you may be where I am" (John 14: 1,3).

And how do we respond?

Some pretend he doesn't exist. They occupy themselves with a study of the piano and ask no questions about the Maestro.

Others hear him, but don't believe him. It's not easy to believe that God would go so far to take us home.

But then, a few decide to give it a try. They venture out of their corners and peek up through the opening. Each day they look toward the sky. They, like Simeon, "wait for" and "look forward to" the day Christ comes (2 Peter 3:11). They know there is more to life than the belly of a piano, and they want to be ready when Christ comes. Thank you again Jesus for becoming one of us. Thank you for dwelling among us. Help us be one of those that are looking forward to you coming. We thank you for your promise of resurrection. We know that we have that hope of being with you some day. Help us to be ready and watching. Amen

West Virginny Green Maters: Fried or as Pie

Fried Green Tomatoes
The ultimate comfort food...fried green tomatoes, greasy and crunchy! In other states folks may throw away those last tomatoes clinging to the vine after the first frost. They're still green on the outside but slightly pink inside. There's no hope of them becoming completely ripe. Us folks in West Virginia slice 'em up and fry them! Perfect as a side dish or an appetizer.
There's multiple ways to coat and fry your tomatoes; use bread crumbs, cracker crumbs, cornmeal, or flour. Most folks dip them in beaten eggs before dredging, while other folks just dredge then fry. Salt and pepper as frying. Bacon grease can be add for an even zestier flavor. A pinch of baking soda in the flour will cause them to puff up a bit. Personally, I prefer them simply dredged through flour, salt, peppered and fried in veg oil.
You can be fancy and dip them in Ranch dressing or drag them through Ketchup, hillbilly style!

Green Tomato Pie
INGREDIENTS
1 recipe pastry for a 9 inch double crust pie
4 cups sliced green tomatoes
1 1/4 cups white sugar
1 teaspoon lemon juice
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1 pinch ground nutmeg
1 pinch salt
2 tablespoons butter

DIRECTIONS
Preheat oven to 375 degrees F. Roll pastry and line a 9 inch deep-dish pie plate.
In a large bowl, combine sliced tomatoes, sugar, lemon juice, flour, cinnamon, nutmeg and salt. Toss lightly to mix. Pour into pastry lined deep-dish pie plate.
Put little dabs of butter in about 4 or 5 places around the top of pie then cover with pastry. Make slits wherever you please.
Bake at 375 degrees F (190 degrees C) for 10 minutes then reduce heat to 350 degrees F (175 degrees C) and continue baking until golden and bubbly.
The Author Corrine says it taste like pumpkin pie!

Jesus: Authority and Power; Faith

Try as I might I'm afraid that I would have been cowering in Jesus' robes during the storm._ Mark 4:39-40. I like to think I'm full of faith but when I think of the persecution that Christians have endured from the beginning to present, I'm so thankful that my faith has never been tested to the extreme.
JESUS: AUTHORITY AND POWER

There are many examples of Jesus' authority, but I'll just mention one of my favorites. Jesus and the disciples are in a boat crossing the sea of Galilee. A storm arises suddenly and what was placid becomes violent--monstrous waves rise out of the sea and slap the boat...

...The very storm which made the disciples panic made him drowsy. What put fear in their eyes put him to sleep. The boat was a tomb to the followers and a cradle to Christ. How could he sleep through the storm? Simple, he was in charge of it.

"Jesus stood up and commanded the wind and said to the waves, 'Quiet! Be still!' Then the wind stopped, and it became completely calm. Jesus said to his followers, 'Why are you afraid? Do you still have no faith?'" (Mark 4:39-40).

Incredible. He doesn't chant a mantra or wave a wand. No angels are called, no help is needed. The raging water becomes a stilled sea, instantly. Immediate calm. Not a ripple. Not a drop. Not a gust. In a moment the sea goes from a churning torrent to a peaceful pond. The reaction of the disciples? Read it in verse 41: "The followers were very afraid and asked each other, 'Who is this? Even the wind and the waves obey him!' " (From The Great House of God by Max Lucado)

Most mighty God who is so powerful that even the wind and waves obey your voice. Help us not to be afraid when the storms of life toss us about like a ship upon water. Help us to call out to you and be confident in you power to still our storms. Bring us peace so as you rest in your presence. Amen

Golden Apple/Black Walnut Cake

Fall festivals in West Virginia are a tradition. Folks get together and celebrate, compete and most importantly eat. The Black Walnut Festival in Spencer, WV is gearing up for its 54th annual celebration, October 9-12, 2008 . Some of the "Main Events" include Art Demonstrations, An Ox Roast, Parades, Competitions, Bake Contest, Classic Cars, Static Displays, a Carnival, Food Concessions and a Chain Saw Carver and plenty of Music!
Even the Govenors' of the state get in on the fun. Here's a recipe from Ex Govenor Bob Wise:

Specialty Recipe
Golden Apple/Black Walnut Cake
Ingredients
2 cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
2 cups sugar
4 cups chopped golden apples
1 cup chopped black walnuts
2 eggs
1/2 cup vegetable oil
2 teaspoons vanilla
Stir together flour, baking soda, cinnamon, and salt. Combine sugar, apples, and walnuts. Beat together eggs, vegetable oil, and vanilla. Add flour and apple mixture alternately. Pour into greased and floured pans (Two 8 x 8-inch pans or one 9 x 13-inch pan). Bake 1 hour at 350 degrees. Cool. Frost with a lemon-butter frosting.

Jesus: The Lamb of God



JESUS: THE LAMB OF GOD


The annual event always drew a crowd. The priest would solemnly ascend the temple steps, cradling in his arms a lamb. As the people waited outside,he would pass through the great curtain and enter the Holy of Holies. He would kill the lamb upon the altar and pray that the blood would appease God. The sins would be rolled back. And the people would sigh with relief.

A great curtain hung as a reminder of the distance between God and man. It was like a deep chasm that no one could breach. Man on his island...quarantined because of sin.

God could have left it like that. He could have left the people isolated. He could have washed his hands of the whole mess. He could have turned back, tossed in the towel, and started over on another planet. He could have, you know.

But he didn't.

God himself breached the chasm. In the darkness of an eclipsed sun, he an a Lamb stood in the Holy of Holies. He laid the Lamb on the altar. Not the lamb of a priest or a Jew or a shepherd, but the Lamb of God. The angels hushed as the blood of the Sufficient Sacrifice began to fall on the golden altar. Where had dripped the blood of lambs, not dripped the blood of life.

"Behold the Lamb of God. And then it happened. God turned and looked one last time at the curtain.

:No more." And it was torn...from top to bottom. Ripped in two.

I'm always amazed when I think of God's Love, his grace. He has continually made it easier over time for us to worship him in faith. He gave us his son and broke down all the barriers. We have a direct line to him. It's a shame that we forget and don't always use it!

God, Zucchini and the plenty!

In July I begin giving out tomatoes to my non-gardening friends. In July they love God's generosity to me. By mid-August I'm slinking onto their porches and unloading several zucchini along with their 'maters. Our neck of the woods frowns upon throwing good food away so I'm not really being kind...I just can only eat so much zucchini. I don't even grow it. My father grows it. He feels its paternal right to unload as much onto me as he can. I feel that if people want my garden tomatoes then its only right that they assume some of the "zucchini" load. I become aproximately 14 in age with my Dad. When he hands me the zucchini and tells me what great gifts zucchini bread will make at Christmas. All I have to do is grate it and freeze it. I simply smile and thank him. My devious little mind has already began mapping the homes I will visit that very evening to begin the unload process. Fritters

Fritters ala Zucchini
Ingredients:
2 medium zucchini grated
1 teaspoon salt
1 grated lemon
Dozen sprigs fresh parsley, chopped
1 clove garlic, chopped
Pinch ground pepper
2 eggs, slightly beaten
1/2 cup flour
2 to 4 Tablespoons olive oil
Preparation:
Place grated zucchini into a medium bowl. Add the salt, lemon, chopped parsley, garlic, pepper, and eggs. Mix well to combine. Slowly add flour, stirring removing all lumps.Heat 2 Tablespoons olive oil in a skillet over medium - high heat. The oil should sizzle when you drop a small amount of zucchini mixture into the skillet. Drop large rounded tablespoons of zucchini batter into skillet; repeat, space fritters so they don't touch in skillet.Fry fritters until golden, 2 to 3 minutes. Lower heat to medium. Turn fritters. Fry an additional 2 to 3 minutes more. Continue until all are done. * Additional oil may be added to keep fritters from sticking.Ranch dressing makes an awesome dip for these delectables.

Zucchini Lasgna

Zucchini Lasagna
Preheat oven to 350 degrees
Ingredients:
1/2 pound cooked lasagna noodles
3/4 cup finely grated mozzarella cheese
1 cup Ricota Cheese
1/2 cup Parmesan cheese, grated
1 egg
1 1/2 cup zucchini, raw, sliced
2 1/2 cup tomato sauce
2 tsp. basil, dried
2 tsp oregano, dried
1/4 cup finely chopped onion
1 clove garlic
Pinch of black pepper
Preparation:
Lightly spray a 9 x 13 inch baking dish with vegetable oil spray.In a medium bowl, combine mozzarella and Parmesan cheese, ricotta and egg. Mix well and set aside.Combine tomato sauce with remaining ingredients. Spread a thin layer of tomato sauce in the bottom of the baking dish. Add a third of the noodles in a single layer.Spread half of the cottage cheese mixture on top. Add a layer of zucchini. Repeat layering.Add a thin coating of sauce. Top with noodles, sauce, sprinkle some parmesan cheese on top of mixture.Cover with aluminum foil.Bake 30 to 40 minutes. Cool for 10 to 15 minutes. Cut into 6 portions

Zucchini Muffins


Zucchini Muffins
Preheat oven to 325 degrees
Aprox. 24 Muffins or 2 loaves
Ingredients
3 eggs
2 cups sugar
1 cup oil
1 and a half teaspoons vanilla
2 cups finely grated zucchini
3 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup crushed pineapple
1/2 cup finely chopped walnuts
1/4 cup dried cranberries
Preparation:
Beat eggs, sugar, oil, and vanilla. Add zucchini, flour, baking powder, baking soda, salt, pineapples, walnuts and cranberries. Pour into two 5 x 9 inch loaf pans or 24 muffin cups.
Bake at 325 degrees for about 3/4 hour for loaves, or 20 minutes for muffins. Cracks across the top and slight browning indicate doness.

West Virginia Slaw Dog!

A true southern West Virginian hot dog is a wild and wonderful creation founded in the Huntington to Charleston area. These heavenly delights aren't common to those of us north of the Mason-Dixon line. The "Hillbilly Slaw Dog" begins with a dog placed in the center of a bun. Mustard is then carefully squirted the length of the dog. Chili sauce is spooned atop the mustard. Then the key ingredient is added "coleslaw". The creamy sweet cole slaw is liberally added and then sprinkled with chopped onions. This unique combination promises to tantalize even the most stubborn of health food diners. Catsup, Ketchup to us Heinz lovers, is NOT permitted as it taints the taste with an acid flavor. To be a true West Virginian Hot Dog the dog must included sweet creamy cole slaw! This recipe is perfect to offset the spicy, hot chili sauce...
West Virginian Sweet Dog Slaw
  • 1 head of cabbage (shredded)
  • 1/4 cup sweet onion
  • 1 C mayo
  • 1/2 C sugar
  • 1/4 C apple cider vinegar
  • 1 teaspoon celery seed

Mix shredded cabbage and onion in large bowl. In a small bowl, mix mayo, sugar and vinegar, celery. Pour sauce over cabbage mixture and mix thoroughly. Chill. Add to hot dog!

Roses and their color's meaning!



Hello,
Not exactly a recipe but I love the "Rose"and decided to share a little. This is a little history of the rose and the meanings behind the colors. The meanings have changed through time and can carry a different meaning when coupled with a different color or even flower.
The rose began as a simple but perfect flower in the dawn of creation. Roses had five petals – they remained 5 petaled throughout pre-history. The simple, single, sweetly-scented rose is the essence of the rose – a thing of beauty – a joy - hardy- healthy protected by thorns. This variety is what we call today the "Wild Rose". In Crete , there are Frescoes dated 1700BC illustrating a rose with five petaled pink blossoms. Discoveries of tombs in Egypt have unveiled wreaths made with flowers, including the rose. The wreath in the tomb of Hawara dates to about 170 AD. This is a representation of the oldest preserved record of a rose species still living.I personally feel that God has given a history to the rose that runs similar to that of the human race.
Throughout the history of civilization, no other flower has been so immortalized and woven into daily life as the rose. Poetry to music, from festivitivals to wars, Mother’s Day to Valentine’s Day, and birth to death, the rose has held a unique symbolic role. The symbolism alone has filled more than a book or two. Below is a simple chart of the meaning of the colors. Please note that Black and Purple roses are not naturally grown though I could have missed a new variety.

White Purity and innocence, silence or secrecy, also reverence and humility
Pink Appreciation,"Thank you", grace, perfect happiness, and admiration
Dark Pink Appreciation, gratitude

It Flits in flight and always delights~The Monarch Butterfly!


Living by the Ohio River I get to delight in the fluttering wings of the Monarch as they fly by and sometimes land upon bright flowers. Declared the official butterfly of West Virginia on March 1, 1995. Its loyalty to the Ohio River banks always fascinates me. It brings the banks alive with its wings and orange colours. The monarch butterfly is sometimes called the "milkweed butterfly" because its larvae eat the plant. In fact, milkweed is the only thing the larvae can eat! If you'd like to attract monarchs to your garden, you can try planting milkweed. Once the larvae transform into the winged orange and black insect it sips nectar from flowers. At summer's end, migrates south to Mexico. Mother's Day

Most countries celebrate Mother's Day. On this day, it is common for Mothers to be lavished with special attention from their children and loved ones. But it hasn’t always been this way.
Only recently named “Mother's Day,” the highly traditional practice of honoring of Motherhood is rooted in antiquity, and past rites typically had strong symbolic and spiritual overtones. Societies tended to celebrate Goddesses and symbols. The actual celebrating of Mom for Mother’s Day is a relatively new occurance. The maternal objects of adoration ranged from mythological female deities to the Christian Church itself. Only in the past few centuries did celebrations of Motherhood develop a human focus and not until the 1900s was it an accepted holiday in the USA.
The earliest historical records celebrating a Mother deity is found with the ancient Egyptians, who held a yearly festival to honor Isis. Isis had a stern, handsome head crowned by a pair of bull horns enclosing a fiery sun orb. Isis’ brother-husband Osiris was slain and dismembered in 13 pieces by their jealous brother Seth, Isis re-assembled Osiris’ body and then used it to impregnate herself. She gave birth to Horus, whom she was forced to hide amongst the reeds so he wouldn't be slaughtered by Seth. Horus grew up and defeated Seth. He then became ruler of Egypt. Thus Isis became as the Mother of the pharaohs.
The Mother and Son imagery of Isis and Horus, in which Isis cradles and suckles her son, is similar to Mary and baby Jesus.
Julia Ward Howe Howe initially worked to have a Mother's Day made a national holiday in the United States but was unsuccessful. Unless she personally funded the ocasion it didn't seem to work.Despite the decided failure of her holiday, Howe had nevertheless planted the seed that would bloom into what we know as Mother’s Day today. A West Virginia women’s group led by Anna Reeves Jarvis began to celebrate an adaptation of Howe’s holiday. In order to re-unite families and neighbors that had been divided between the Union and Confederate sides of the Civil War, the group held a Mother’s Friendship Day.
After Anna Reeves Jarvis died, her daughter Anna M. Jarvis campaigned for the creation of an official Mother’s Day in remembrance of her mother and in honor of peace. In 1908, Anna petitioned the superintendent of the church where her Mother had spent over 20 years teaching Sunday School. Her request was honored, and on May 10, 1908, the first official Mother's Day celebration took place at Andrew's Methodist Church in Grafton, West Virginia and a church in Philadelphia, Pennsylvania. The West Virginia event drew a congregation of 407 and Anna Jarvis arranged for white carnations, her Mother’s favorite flower, to adorn the women. Two carnations were given to every Mother in attendance. White carnations are used to honor deceased Mothers, while pink or red carnations honor Mothers who are still alive. Andrew's Methodist Church exists to this day, and was incorporated into The International Mother's Day Shrine in 1962.

Ramp Capitol Of The World! Gotta love us Mountaineers or is it smell us?

Ramps...woooeeee!
Wild leeks or ramps are a crop that West Virginians dig up out of the fertile dark dirt of the Appalachian Mountains. These tender plants peek their heads through the dirt about the same time as winter ends. Ramps being the first "greens", they were once considered a tonic. They provided necessary vitamins and minerals following long winter months without access to fresh fruits and vegetables. Today they are still considered an offensive tactic to colds and are being researched for cancer treatments.
By mid April til the end of May, we’re able to have a hootin’ hollerin’ good time with the harvest of local ramps. Festivals rage throughout the Mountain State as ramps become the reason for neighbors getting together and celebrating the end of winter. The intelligent person indulges with their neighbors because after eating ramps the garlicky, onion-like odor remains for days. Wild leeks have a strong onion/garlic flavor. A pungent odor permeates the air when leeks are being cooked. Richmond, West Virginia is called the "Ramp Capitol"of the world. Home of the annual Ramp festival. Travel into our state and allow your nose to direct you to the largest state Ramp festival. The food is locally cooked for days causing quite the odor wafting throughout the entire county.

The wild leeks/ramps grow approximately a foot tall. The entire plant from the roots to the tip of the leaves is edible. Caution is advised when eating this plant the odor and taste remain with the diner for days. I suggest starting off with the tender leaves and working your way into root eating. Having learned this lesson the hard way; *Do not apply contacts into eyes for a few days after ramp handling
.Wild leeks have a taste all their own, but are very much like an onion mixed with garlic. They can be used in place of onions in many recipes. Wild leeks fried with scrambled eggs or fried potatoes are two classic West Virginian recipes. (Don’t forget the catsup or ketchup in my case!)
Storage can be either canning or freezing!
Ramp Tater Soup

INGREDIENTS:
Quarter pound of sliced Bacon
4 cups chopped ramps (Leaves for newbies, whole stock for advanced diners)
4 to 5 cups diced small white Potatoes
4 cups Chicken Broth
1 cup Heavy Cream
Salt and Pepper, to taste
Fresh Chopped Chives for garnish
PREPARATION:
Fry bacon in large skillet. Add ramps and potatoes to the skillet. Fry on medium-low heat until ramps are tender.Stir in chicken broth and simmer until potatoes are tender. (Potato slides easily from fork) Stir in the cream. Heat thoroughly on low-medium heat. Add salt and pepper to taste.Sprinkle top with fresh chopped chives. Serves 4 to 6.

Chicken Crescent Rolls~Love you too Rick!


Chicken Crescent Rolls Ingredients:
2 c Cooked cubed chicken
4 oz Cream cheese, softened
2 tb Butter
1 8 oz can crescent rolls
I usually cook some chopped onions with the chicken
A pinch of salt and pepper
Chicken Crescent Rolls Instructions:
Mix cream cheese and butter.
Add chicken.
Separate crescent rolls into 4 rectangles and seal perforations.
Put 1/2 cup chicken mixture in center of each rectangle.
Bring 4 corners of dough to center and seal.
Bake on slightly greased cookie sheet 20-25 minutes until brown.

The Pepperoni Roll

Pepperoni rolls are a statewide treasure of the Mountain State. Different bakeries within the state claim credit. The 1920s seems to be the approximate appearance of these specialty rolls. An idea that developed deep in Marion county, West Virginia. These delectable treats have been coming out of West Virginia for more than 80 years.
This is my favorite! It all began when coal miners, on their way to work each day, would buy a stick of pepperoni and a loaf of bread to take into the mine. Then one day a baker came upon an idea; he decided to start slicing the pepperoni into smaller sticks and cook them within the bread. He did that for many of the local miners to take in their lunch buckets. Not only was it tasty but it also had the perfect packaging. Easy To Eat! A must when your eating lunch beneath the earth among dusty coal!
My recipe is very simple:
I use Pillsbury Pop-and - Fresh Dough, Pepperoni Slices, Cheese, Mozzarella or Provolone.
Roll out the dough, line with pepperoni and cheese, roll up. Put on cookie sheet and bake at 350 degrees for about 10 minutes, until lightly brown.
Sauce, mushrooms, peppers, onions can all be added to spice them up!

Golden Delicious Apples ~ Apple Butter

My son is in the fourth grade. He is studying West Virginia history. It has becomes family fun and family food!
The Golden Delicious Apple was a chance seedling found on Mullins' farm in Clay County, West Virginia in the year 1905. The Mullins Family called it an Annit apple. This apple went on to become an international favorite. This apple is grown on every continent. In 1972 West Virginia made this delightful homegrown favorite its state fruit. Sweeter than Granny Smith apples, The Golden Delicious is a favorite for salads, applesauce and apple butter.Clay County hosts a fair every year to honor The Golden Delicious Apple! Throughout the Autumn West Virginia hosts a variety of fairs featuring apple butter. Tucked in cookbooks modified for taste here's two recipes for you to try.
Southern Apple Butter
Aprox. 2 cups of water. A half cup of apple cider replacing a half cup of the water adds a bit of twang.
4 lbs. Apples (Cored and quartered with skins on)
4 c Sugar
4 ts Cinnamon
1/4 ts Cloves
1/4 ts Salt
Cook apples and water on high in 8 quart pan til boiling; reduce heat to simmering. Cook aproximately 20 minutes until soft. Remove from heat. Pour apples through sieve. Return the apples to the pan and add the remaining ingredients,stir. Cook on medium heat, stirring continually to prevent burning. Scrape the bottom of the pan while you stir to make sure a crust is not forming at the bottom. Cook until thick and smooth. Apple butter test: spoon a tad onto a cold plate and allowed to cool, taste. Cooking time about 1 and an half hours. You can cook the butter on low heat, stirring only occasionally, but this will take longer as stirring and the higher heat helps with evaporation. Near abouts 3 pints! Perfect for canning or freezing!
Low on time? Throw this in the slow cooker before work! Stop at the bakery after work for fresh homemade bread!

Cheater Apple Butter
1 cup applesauce1/2 cup sugar1 teaspoon cinnamon
Combine all ingredients in slow cooker. Cook on low 8-10 hours. Remove lid and cook on high until thickened.

West Virginia Breakfast favorite! Deer Gravy and Biscuits

Biscuits and Deer Gravy
A hunter's must have breakfast!
Gravy
Ingredients:
Aprox. 1 pound Deer, cubed
Depending on the season substitutions of squirrel and possum can be made!
1 cup flour
1/4 teaspoon garlic salt
1/4 teaspoon onion salt
Salt and Pepper to taste
1/2 cup cooking oil or melted lard
2 cups of milk
1 cup of water
Directions:
Cover meat in flour
Brown in oil using a large cast iron skillet or teflon skillet lacking a cast iron one.
Add the rest of the flour and brown with meat.
More oil may be needed to keep mixture moist.
Add two cups milk, 1 cup water and seasonings.
Bring to boil, stirring constantly. You may add more water to desired thickness; We like it creamy.
Biscuits
Preheat oven to 450 degrees
Ingredients:
4 cups flour
5 teaspoons baking powder
1/4 cup oil
1 and 1/2 cups of Milk
Directions:
Blend together flour, baking powder and oil until mixture is crumbly.
Add cups milk
Shape biscuits by hand or with cutter.
Place on cookie sheet and bake for aprox. 12 minutes.

Dish the gravy over them there biscuits and you're ready to go a huntin!

Possum and Sweet Tater Delight

Ingredients:
1 possum, cleaned and cut up in bite-size pieces
a tad over a pinch about 1/2 teaspoon salt
a pinch of or 1/4 teaspoon coarse black pepper
5-6, depending on the size, sweet potatoes, warshed and cut up in chunks
about a handful or a 1/2 cup white granulated sugar
another handful or 1/2 cup brown sugar
1/2 cup lard/oleo, or crisco/ margerine
pert close to a gallon of water, more if needed
Marshmellows added to the top of the taters make it real purty!

Preheat Oven to 350 degrees

Directions:
Skin and wash possum.
Put possum in a large sauce pot/kettle.
Cover with water.
Add salt and pepper.
Cover pot and steam until possum is tender. Aprox. 1 hour.
Save 2 cups of juice.
Place possum in center of roaster and place sweet taters evenly around the possum.
Sprinkle with white and brown sugars over taters.
Dab the oleo on top of the sugars evenly.
Pour the 2 cups of juice over everything.
Bake until taters are fork tender and light brown, the juices from the possum should have cooked away.
Aprox. 45 minutes
Add marshmellows to the top after removing from ven or add 5 minutes before removing from oven!
